Scale Handled Through Logistics, Not Shortcuts

Every format runs on the same sourcing list. The proteins are the same cut whether we're serving 40 guests or 400. Volume is a logistics problem we solve before the event, not a quality compromise we make during it.

Fresh masa, whole spices, and house-made salsas travel with every station. Nothing is pre-made off-site and reheated tableside.
